Soup and sandwich is a classic lunch combo. This can be ordered at any restaurant and the most popular soup is Tomato soup. As far as I think there is no pairing more comforting or better balanced than these two. We love this combo specially in winters. A hot bowl of tomato soup, with either a dollop of butter or some grated cheese, and a nice crisp grilled cheese sandwich . It sure is a perfect lunch. At times we love to add some fries too, but this time I wanted a perfect classic duo.
Here is a combo which might be very popular internationally, specially in American countries , but it is equally popular in Indian families too. So let’s get down to the recipes. This is the recipe that we follow at our restaurant and is a big hit.

1 tbsp butter
1 star anise
1 big Cardamon
1 bay leaf
Small piece cinnamon
3-4 whole black pepper
I onion, roughly chopped
3-4 cloves garlic, unpeeled and slightly crushed
5-6 large tomatoes
Few coriander leaves and stems
1 tbsp tomato ketchup
1 tsp corn flour dissolved in 1/4 cup water
Salt to taste
Warm the butter.
Add the whole spices, onion and garlic.
Saute for 3-4 minutes.
Add the carrot and Saute again.
Add the tomatoes , let cook till mushy.
Add water and let boil for 15-20 minutes.
By now the tomatoes would have well cooked and the flavors infused.
Strain the soup well.
Add tomato ketchup ,salt and put the soup to boil.
Dissolve the corn flour in cold water and gradually add to the soup.
The soup will thicken.
Garnish with oregano, chilly flakes and grated cheese.
Makes : 1 jumbo sandwich
2 slices jumbo bread
3 tbsp butter
2 slices cheese
Apply butter on one side of both slices of bread.
Place cheese slices on it.
Take the other slice , butter side down , place it on top of the cheese.
Grill in a grill toaster, until crisp and brown or till cheese melts.
