Farfalle is a type of pasta. commonly known as “bow-tie pasta”, the name is derived from the Italian word farfalla. The “e” at the end of the word is the Italian feminine plural ending, making the meaning of the word “butterflies”.
So for today it is Farfalle pasta in spinach and cheese sauce , with the letter ” F” under baking theme.

I have used wheat flour for the basic sauce , combining it with garlic and spinach which makes the dish healthy and delicious.

1 cup Far falle, boiled

Spinach and Cheese Sauce

1 tb sp garlic, finely chopped

2 tbsp butter

1/2 cup spinach
2 tbsp wheat flour
500 ml milk
1/4 cup cottage cheese
Salt and pepper to taste

Sautรฉ the garlic in butter till pink.
Add spinach, let it wilt.
Add flour and roast till pink.
Add milk and stir continuously.
Combine cottage cheese and 1/4 cup milk and blend in a blender till a smooth paste is formed.
Switch off the gas and add the cottage cheese mix to  the white sauce.
Add salt and pepper and the boiled pasta to the sauce.
Cook for 3-4 minutes.
Transfer to a serving dish and sprinkle cheese.
Bake at 200 deg for 20-25 minutes or till done.
Sprinkle your favorite herbs…I added some lemon pepper .

This is a dish which is on my regular menu , specially in winters when the greens are fresh and the piping hot dish is enjoyed in the cold winter nights.If you wish you can always add other veggies, but I love the combination of cottage cheese and spinach, garlic of course enhances it.

Simple herbs like pepper is the best that we like in this dish, but here I have used lemon pepper, which I had picked from US.This has some lemon zest,Sine we do not get it here I am sure we could dry a bit of the lemon zest and use it, tastes absolutely divine.

The week has come to an end , where I have posted all Baking recipes, now we will  start with the second week…do check some interesting street food recipes which will be coming up from Monday.

  1. OMG Vaishali! You're such a wonderful baker and you're talking about my skills!! Farfalle is my fav pasta shape. This looks so cheesy (;) and so totally yummy! And I too add wheat in place of maida for the white sauce and find that it hardly makes a difference. Great post dear
