Thai Freekeh Salad

Thai Freekeh Salad is a high protein salad with the super grain Freekeh, made the Thai style. A medley of flavours and a must-try.

Moving on to the next day in Protein-Rich salads I have a Freekeh Salad.
I was introduced to this super grain by Priya when she sent me a packet of this for our Recipe Exchange theme. I had guessed that it was some kind of wheat, but no further than that. At that point, I was not aware of its name Freekeh. It is also called Farik. I had made a Mexican  Salad with it and we loved its nutty smoky flavour.

 

Freekeh is wheat that’s harvested while young and green. It’s roasted over an open fire, then the straw and chaff are burned and rubbed off. The grain on the inside is too young and moist to burn, so what one is left with is a firm, slightly chewy grain with a distinct flavour that’s earthy, nutty, and slightly smoky.

This super grain has been a staple of the Middle East but has gained its popularity very recently. We do not get Freekeh here, so I asked my cousin to get it from the US. She got me the cracked Freekeh variety. It retains its nutritional benefits be it whole or cracked. Interestingly it has more protein and twice as much fibre as quinoa.

A Thai Salad sounded a wonderful option for a Protein-Rich salad. I added bell peppers, purple cabbage, spring onion. the dressing is Protein Rich. It is with peanut butter and honey. The garnish to a Thai salad is naturally coarsely ground peanuts. Check out this low fat, fibre and Protein-Rich Thai Freekeh Salad, which was loved by the family.

Thai Freekeh Salad

Ingredients

2 cups cooked freekeh
1 /2 cup bell peppers, mixed colours, diced
1/4 cup purple cabbage, julienne
1 spring onion, roughly chopped
1/4 cup moong bean sprouts, raw

Dressing

1/4 cup peanut butter
1 tbsp honey
2 tbsp soy sauce
1 tbsp vinegar
1 tsp lime juice
1 tsp olive oil
Salt to taste

Garnish

Carrots
Peanuts, coarsely ground

Method

Mix all the salad ingredients in a bowl.
Microwave peanut butter and honey for a minute or till they both combine well.
Using a whisk, mix in the rest of the ingredients.
Make sure they combine well.
Pour the dressing over the salad, mix well.
Garnish with carrots and coarsely ground peanuts.

Ingredients

  • 2 cups freekeh cooked
  • 1 /2 cup bell peppers mixed colours , diced
  • 1/4 cup purple cabbage julline
  • 1 stem spring onion roughly chopped
  • 1/4 cup moong bean sprouts raw

Dressing

  • 1/4 cup peanut butter
  • 1 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 1 tsp lime juice
  • 1 tsp olive oil
  • Salt to taste

Garnish

  • carrots
  • peanuts coarsely ground

Instructions

  • Mix all the salad ingredients in a bowl .
  • Microwave peanut butter and honey for a minute or till they both combine well .
  • Using a whisk , mix in rest of the ingredients.
  • Make sure they combine well .
  • Pour the dressing over the salad , mix well .
  • Garnish with carrots and coarsely ground peanuts .

  1. lovely salad – My Asian-food-loving husband will like this. the grains remind me of “Ponkh” or “Pankh” that we get in Gujarat around Uttarayan and the taste u describe is also similar – nutty ?

  2. Am yet to find out this freekeh and this thai version freekeh salad sounds extremely delicious and fabulous, what a wonderful way to include freekeh in our diet. Beautiful salad there.

  3. Yet to try freekah. Love the salad, I like peanut butter a lot and love it when it’s combined with honey. Have tried that combination for noodles with sprouts.
