Double Chocolate Muffins

Double Chocolate Muffins are soft and spongy muffins with a double treat of chocolate.

Since the past couple of months, I have practically stopped baking. I am not consuming any sugar or maida. To bake something, I need an occasion and friends or family who would relish these bakes.

It was my son’s birthday and I had a reason to bake, but before I could get into action Sneha, my daughter in law already baked a cake. She is a fantastic baker and bakes for our restaurant, The Blue Oven. It was a small cake and got over immediately. At night my hubby asked if there was some cake so he could take it to the office for the staff – and I immediately jumped up and said Yes yes! I woke up early morning and baked these chocolate muffins. They are super simple and so quick to make. He was surprised to see all the muffins – perhaps he was expecting a few pieces of cake. I was happy as I got a call from the office staff saying they loved these muffins.

Sometimes I wish we should have really big families, you get a chance to bake or cook easily. With small families, we hardly get to cook or bake stuff. Anyways, here are these super delicious, sinfully chocolaty muffins which you will totally love!

Double Chocolate Muffins

Double Chocolate Muffins

Ingredients

11/4 cups flour
1/4 cup cocoa powder
1 tsp coffee powder
3/4 cup sugar
1 cup yoghurt
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 cup cooking oil
11/2 tsp vanilla essence
Chocolate chips

Method

Sieve maida and cocoa twice and keep them aside.
Cream sugar and curd until sugar completely dissolves.
Add baking powder, baking soda to the creamed mixture. Mix well.
Leave aside for 5 mins and you can see the bubbles appearing.
Add vanilla essence, cooking oil and mix well.
Add the flour mix in portions at a time and blend with wet ingredients.
Beat well with a whisk until creamy and thick.
Coat the chocolate chips with flour and add some to the batter.
Preheat oven to 180 deg C for 10mins. Meanwhile grease a butter paper, lay it in the cake tin or loaf pan or grease muffin moulds, place a liner and pour the batter.
Sprinkle more chocolate chips over the top.
Bake for 12-14 minutes or till a skewer comes out clean.
If making a cake then bake in preheated oven at 200 degrees C for 10 mins, then reduce temperature to 180 deg C and bake it for 30-35 mins or till a fork is inserted into the centre of the cake comes out clean.
Let cool to remove from moulds.

  1. I can understand the sentiment. I too have gradually stopped baking since my son has moved out to college since he is the only one with a sweet tooth besides me at our home. These muffins sound yummy with those chocolate chips peeking in. Love the setup as well.

  3. Vaishali, those chocolate muffins look sooo sinful. I completely understand about waiting for occasions to bake. I am like that too — I need to know that there is someone to take the goodies before I bake πŸ™‚ My kids will LOVE your chocolate filled muffins.

  5. I can totally echo on your feelings regarding baking… I am on a hiatus from baking, and somehow while making some, they are just flopping for me now… πŸ™ Double or triple, chocolate is chocolate and the more the better… those muffins look absolutely moist…
